Ravioli Rolling Pins
Possibly the most authentic type of ravioli maker is a ravioli rolling pin (sometimes referred to as simply a Ravioli Pin or Checkered Pin).
A ravioli rolling pin works by imprinting a shape onto a sheet of fresh pasta, and then sealing and crimping another sheet on top once the filling has been measured out.
Although it may take a few attempts to perfect your technique, as long as you keep your pasta sheets well floured and don’t use too much filling you will find the process very simple and fast.
Whilst you can sometimes find ravioli rolling pins made from cast aluminium, the most popular and inexpensive examples are wooden. Wooden ravioli rolling pins are hard-wearing and should last you a lifetime, although care should be taken to avoid getting your pin wet as this can cause the wood to weaken and crack. You should also avoid storing a wooden ravioli rolling pin with other utensils in a drawer as any nicks or scratches in the pin surface make it more likely that it will stick to your pasta sheets.
Most ravioli rolling pins make square ravioli ranging in size from 1 inch to 1.75 inches, so if you are looking to make ravioli in other shapes and sizes then you may want to consider a ravioli mold as an alternative.
Ravioli rolling pins are quite decorative and look great in any kitchen (in fact you sometimes find individuals who use them as decoration only, unaware of the great ravioli they are missing out on! The fools!)
